Vegan Brussel Sprout & Red Cabbage Slaw

Not only is it completely stacked with nutrients (Thiamin, Calcium, Iron, Magnesium, Phosphorus and Potassium, Dietary Fiber, Vitamin C, Vitamin K, Vitamin B6, Folate and Manganese), it’s also a rich beautiful color.

The only health downside to a normal slaw is that they’re usually made with super fatty, processed mayo – so I decided to make a lighter alternative!

Brussel Sprout & Red Cabbage Slaw
(Makes 3 Cups)

1/3 Head of Red Cabbage
1/4 Red Onion
8-10 Brussel Sprouts
2 Medium Avocados
2 Medium Carrots
1 Apple (red or green)
1/2 Cup of Golden Raisins or Grapes
1 Lime

1. Finely chop cabbage, onion, sprouts and apple
2. Shave carrots
3. Mix all in a large mixing bowl with raisins/grapes
4. Scoop out avocado and add into mixture with the juice of one lime
5. Mix until the avocado is soft
6. Season to taste with S&P, serve chilled
