Pumpkin Spice Superfood Bites

As soon as fall hits we all love those familiar comfort flavors – pumpkin, cinnamon, nutmeg, cloves, chocolate, etc. This is one of my favorite “recipes” because you can adjust it for different seasons and occasions and it’s always delicious, but more importantly – healthy! It’s easy to slip into not-so-good eating habits around the holidays, but with a little creativity, you can enjoy the seasonal tastes you love and still eat clean. I like to make a big batch on Sundays and keep them in the fridge for quick and easy snacks throughout the week.

Pumpkin Spiced Superfood Bites

Ingredients

  • 2 Cups Steel-Cut Oats
  • 1.5 Cups Pumpkin Puree
  • 2 Tbspn Almond Butter
  • 1/2 Cup Raisins
  • 1 Tbspn Chia Seeds
  • 2 Tbspn Ground Flax Seeds
  • 1 Tbspn Hemp Seeds
  • 2 Tspn Honey or Agave Nectar
  • 1 Tspn Cinnamon
  • 1 Tspn Nutmeg
  • Pinch Cloves

 

Directions

Combine all ingredients in a large mixing bowl – add more almond butter or honey/agave if it needs more moisture. Roll into small balls and refrigerate for a few hours before eating.
